Victory Online Recipes – Ice Cream

Raspberry Ripple Ice Cream



400g Cream

400g  condensed milk

170g Raspberries (or soft fruit of your choice)

Optional – a shot of alcohol (vodka or a fruit flavour)
A tablespoon of sugar


Cook your fruit in a small splash of water and sugar if using. Simmer until broken down and very soft.

Tip  the raspberry puree into a blender and give it a whizz – or beat well with a wooden spoon.

Sieve the raspberry puree into a bowl so you have a lovely smooth  raspberry coulis.

Set aside to cool completely.

Put 400g of condensed milk and 400g  of thick cream into a bowl or mixer ( you can absolutely whip it up by hand ) and whip to combine and thicken it.

Add a shot of liquor if using and whisk to combine

Layer up your fruit puree and ice cream mix alternately and give everything a swirl with a cocktail stick to create ripple patterns.

Freeze for several hours or overnight until it’s firm but still soft scoop.
