200g castor sugar
250ml fresh lemon juice
Zest of 3 lemons
100g lightly salted butter, melted
- In a microwave safe bowl, whisk sugar and eggs until smooth
- Sir in lemon juice, zest and melted butter
- Cook in the microwave for 1 minute bursts, stirring after each minute.
- After 3 – 4 minutes, when the curd coats the back of a metal spoon, pour the lemon curd into sterilised jars and keep in the fridge for up to 2 weeks.
